Smoked Tuna Dip

Ingredients:

2 14 ounce cans solid white Albacore Tuna in water
3-tbsp. mayonnaise - more to taste & to achieve desired texture
1-tsp. liquid hickory smoke
1/8-tsp. Tobasco red pepper sauce.
Kosher Salt to taste
Ground white pepper to taste
1-tbsp. drained, capers (optional)


Directions:

1. Drain 2 (14 oz) cans of white Albacore Tuna.

2. Place tuna in food processor along with other ingredients, except the capers, and process until blended to desired consistency. Add more mayonnaise if necessary.

3. Adjust salt and pepper to taste. Fold in the capers if desired. Refrigerate and hold until service.

4. Serve with crackers, celery sticks, or other raw vegetables.


Yield: Approximately 1 quart, or 8 (6 oz) servings
