Super Simple Salsa
Sent in by Captain Jay Iacone, Fairfax County Fire Department.

Ingredients:

3 - 15 oz cans of diced tomato, reserve juice

1 - 15 oz can black beans, drained

1 - 10 oz box of frozen yellow corn

2-3 Jalapeño peppers, chopped fine

1 small red onion, chopped fine

2 - 1 oz packages fajita mix

Salt & pepper to taste

Splash of hot sauce, if required


Directions:

Drain and rinse black beans. Combine all ingredients in a bowl, stir gently and season with salt, pepper and hot sauce. Let rest for about 60 minutes before serving with your favorite chips. This also makes an excellent accompaniment to roasted or grilled chicken and fish.
